- 1 medium beetroot
- ¼ cup water
- ¼ cup low-sodium carrot juice
- ½ cup low-sodium tomato juice
- ⅛ teaspoon ginger (freshly minced or dried)
- 1 oz (about 2 tbsp) lime juice

- Peel and chop the beetroot.
