  • 1 medium beetroot
  • ¼ cup water
  • ¼ cup low-sodium carrot juice
  • ½ cup low-sodium tomato juice
  • ⅛ teaspoon ginger (freshly minced or dried)
  • 1 oz (about 2 tbsp) lime juice
  • Ice cubes (optional)

🧃 Instructions

  1. Peel and chop the beetroot.
  2. In a blender or mixing jug, combine the beetroot with water, carrot juice, tomato juice, and ginger.
  3. Blend until smooth or mix well if using pre-juiced beetroot.
  4. Stir in the lime juice.
  5. Add ice cubes if desired.
  6. Pour into a glass and serve immediately.
