🥬 Easy Homemade Kimchi Recipe

A spicy, gut-friendly Korean dish packed with probiotics and flavor!

📋 Ingredients

For the rice paste:

1 cup water

1 ½ tablespoons rice flour

1 ½ tablespoons powdered brown sugar

For the spice mix:

2 medium onions

15–16 garlic cloves

2-inch piece of ginger

½ cup red chilli powder (or to taste)

1 ½ teaspoons salt (or to taste)

1 tablespoon paprika (optional, for color)

¼ cup fish sauce

For the vegetables:

1 kg napa (Chinese) cabbage

1 cup water

¼ cup salt (for brining)

½ cup chopped chives

1 cup julienned carrots

1 cup julienned radish

½ cup chopped spring onion

👩‍🍳 Let’s Make It!

1. Make the rice paste:

In a saucepan, whisk 1 cup water and rice flour.

Cook on low heat until it thickens, then add brown sugar and cook for 1–2 more minutes. Let it cool.

2. Prepare the spice mix:

Blend onion, garlic, and ginger in a chopper.

Mix it with the cooled rice paste, red chilli, salt, paprika, and fish sauce. Set it aside.

3. Prep the cabbage:

Cut the cabbage into quarters, then into large bite-size chunks.

In a large bowl, mix it with 1 cup water and ¼ cup salt.

Let it brine for 3–4 hours, flipping halfway through.

Rinse with cool water and drain for 30 minutes.

4. Mix it up:

In a big bowl, add the drained cabbage, carrots, radish, spring onion, chives, and the spicy paste.

Wear gloves and mix well. It will smell strong — that’s totally normal!

5. Time to ferment:

Pack your kimchi into a clean airtight glass jar or container.

Leave it at room temperature for 24 hours. You might see bubbles — that’s the fermentation magic!

6. Refrigerate & wait:

After 1 day, refrigerate for 3–4 days. Open and press the kimchi down daily with a clean spoon to keep veggies submerged.

Store in a sealed container in the fridge for up to 2 months.

Always use a clean spoon to take some out (no fingers, please!).
